Grilled Peach Flatbread
Ingredients:
? 1 store-bought pizza dough or flatbread
? 1/2 cup tomato sauce
? 8 oz fresh mozzarella, sliced
? 2 ripe peaches, sliced
? 1 half large Heirloom tomato, sliced
? 1 cup arugula
? Olive oil, for brushing and drizzling
? Salt and pepper, to taste
Instructions:
1. Preheat your electric grill to 450.
2. Roll out the pizza dough or flatbread into your desired shape and thickness. 3. Brush both sides of the dough with olive oil to prevent sticking.
4. Place the dough on the preheated grill and cook for 2-3 minutes on each side, or until lightly charred and cooked through. Remove from the grill and set aside.
5. Add chopped peaches to grill with olive oil and grill for about 2 minutes.
6. While peaches are cooking, spread a thin layer of tomato sauce over the grilled flatbread, leaving a small border around the edges.
