Stuffed Peppers with Minute Rice
▢2-4 flavored Minute Rice Cups (I used Cilantro & Lime Jasmine Rice)
▢2 tomatoes, diced
▢1 onion, diced
▢ 2 cloves garlic, diced
▢4 bell peppers (red, yellow or orange)
Optional toppings: shredded cheese, sour cream, cilantro
Preheat oven to 350ºF. Spray a baking dish with cooking spray and set aside. Cut the tops of the bell peppers off and remove the seeds.
Dice tomatoes, onion and garlic
Microwave Minute Rice Cups in microwave for 60 seconds, use ½ to 1 cup for each pepper
Stuff peppers with rice, onions, and tomatoes
Place in the baking dish and then add shredded cheese if desired.
Bake for 10-15 minutes, or until the cheese is bubbly. Let cool and enjoy!
